Instructions

  • Prepare your workspace: Set up three shallow bowls or plates. In the first, combine the flour, paprika, garlic powder, onion powder, black pepper, and salt. Place beaten eggs in the second bowl and breadcrumbs or crushed cornflakes in the third.
  • Coat the chicken: Working in batches, coat each chicken piece in the flour mixture, shaking off any excess. Dip into the beaten egg, ensuring full coverage, then roll in the breadcrumbs until completely coated. Place coated pieces on a clean plate and let them rest for 5 minutes.
  • Heat the oil: Pour vegetable oil into a large skillet to a depth of about 0.5 inches and heat over medium-high heat until it reaches 350 degrees Fahrenheit, about 5-7 minutes. Test the temperature by dropping a small piece of coating into the oil; it should sizzle immediately.
  • Fry the bites: Carefully add coated chicken pieces to the hot oil in a single layer, working in batches to avoid overcrowding. Fry for 3-4 minutes per side until golden brown and cooked through, about 7-8 minutes total. Transfer to a paper towel-lined plate.
  • Cook the fries: Arrange frozen fries on a baking sheet in a single layer and bake at 425 degrees Fahrenheit for 20-25 minutes, shaking the pan halfway through, until golden and crispy.
  • Arrange the base: Place your hot, crispy fries on a serving platter or individual plates, creating an even layer.
  • Layer the chicken: Arrange the warm crispy chicken bites on top of the fries, distributing them evenly.
