Ingredients

  • 4 chicken drumsticks
  • 4 chicken thighs
  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 eggs
  • 1 cup buttermilk or regular milk as a substitute
  • 2 inches vegetable oil for frying enough to reach 2 inches in your skillet
  • 4 cups chopped lettuce romaine or iceberg work well
  • 1 cucumber sliced into rounds
  • 1 cup cherry tomatoes halved
  • 1 red onion thinly sliced
  • Optional toppings: dressing (ranch or vinaigrette), croutons, shredded cheese, or fresh herbs

Instructions

  • Prepare the Coating
  • 1. Mix the Dry Ingredients: In a large bowl, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper, stirring until evenly distributed.
  • 2. Prepare the Wet Mixture: In another bowl, whisk together the eggs and buttermilk until well combined.
  • 3. Coat the Chicken: Pat your chicken pieces dry with paper towels, then dip each piece into the buttermilk mixture, allowing excess to drip off, and then dredge thoroughly in the seasoned flour, pressing gently so the coating adheres.
  • 4. Let It Rest: Place the coated chicken on a plate and allow it to rest for 5 minutes before frying, which helps the coating set.
  • Fry the Chicken
  • 1. Heat the Oil: Pour vegetable oil into a large skillet to a depth of about 2 inches and heat over medium-high heat until it reaches 350 degrees Fahrenheit, about 8-10 minutes.
  • 2. Fry the Drumsticks: Carefully place the coated drumsticks into the hot oil and fry for 12-15 minutes, turning halfway through, until the coating is golden brown and crispy.
  • 3. Fry the Thighs: Add the chicken thighs to the oil and fry for 15-18 minutes, turning occasionally, until they reach an internal temperature of 165 degrees Fahrenheit.
  • 4. Drain and Cool: Transfer the fried chicken to a paper towel-lined plate to drain excess oil and cool slightly before serving.
  • Prepare the Salad
  • 1. Chop the Lettuce: Place 4 cups of chopped fresh lettuce into a large bowl, breaking pieces into bite-sized chunks if needed.
  • 2. Slice and Prep Vegetables: Add the sliced cucumber, halved cherry tomatoes, and sliced red onion to the lettuce, tossing gently to combine.
  • 3. Dress the Salad: Just before serving, drizzle with your choice of dressing and toss until the vegetables are lightly coated.
  • Assemble the Plate
  • 1. Start with Salad: Arrange the fresh lettuce mixture as the base of each plate, creating a generous bed of greens and vegetables.
  • 2. Top with Chicken: Place 2 drumsticks and 2 thighs on top of the salad, arranging them so they're stable and visually appealing.
