Ingredients

  • 500 g beef steak cut into bite-sized cubes, about 1 to 1.5 inches for even cooking
  • 2 tablespoons butter for the rich garlic coating
  • 1 tablespoon olive oil to prevent the butter from burning
  • 4 garlic cloves minced for maximum flavor
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper freshly ground if possible
  • 1 teaspoon paprika for a subtle smoky depth
  • 1 teaspoon dried parsley for color and herbal notes
  • 4 large potatoes cut into thin fries, about 1/4 inch thick
  • 2-3 cups vegetable oil for frying depending on your pot size
  • 1/2 cup grated Parmesan cheese for topping the fries

Instructions

  • Prepare the Beef
  • 1. Season the Beef: Pat the steak cubes dry with paper towels to ensure a good sear. In a bowl, combine salt, black pepper, paprika, and dried parsley, then coat the beef cubes evenly with this seasoning mixture.
  • 2. Heat the Pan: Heat a large skillet over medium-high heat for about 2 minutes until it's hot enough that a drop of water sizzles immediately.
  • 3. Sear the Beef: Add the olive oil to the hot skillet, then working in batches to avoid overcrowding, add the seasoned beef cubes and sear for 2-3 minutes on each side until they develop a golden-brown crust. Don't stir constantly; let them sit to caramelize properly.
  • 4. Add the Garlic Butter: Once all the beef is seared and returned to the pan, reduce heat to medium and add the butter and minced garlic, stirring gently for about 1-2 minutes until the garlic becomes fragrant and the beef is coated in the foaming butter mixture. The internal temperature should reach 130-135°F for medium-rare.
  • Prepare the Fries
  • 1. Traditional Deep Fry: Heat the vegetable oil to 350°F in a deep pot or Dutch oven. Working in small batches, carefully add the cut potatoes and fry for 6-8 minutes until golden and crispy, then drain on paper towels and season with a pinch of salt immediately.
  • Assemble the Dish
  • 1. Plate the Fries: Arrange the hot, crispy fries on a serving plate or platter, creating a generous base for your meal.
  • 2. Top with Cheese: While the fries are still hot, generously sprinkle the grated Parmesan cheese over them so it melts slightly from the heat.
  • 3. Add the Steak Bites: Place the garlic butter steak bites on top of or alongside the cheesy fries, pouring any remaining pan juices over them for extra flavor.
  • 4. Garnish and Serve: Add optional fresh herbs, lemon zest, or extra garlic as desired, then serve immediately while everything is still hot.
