Ingredients

  • 6 chicken drumsticks about 2-3 pounds total
  • 2 tablespoons olive oil for chicken
  • 1 teaspoon paprika for color and mild sweetness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon chili powder adjust for heat preference
  • 1 tablespoon lemon juice fresh or bottled
  • 4 large potatoes russet or Yukon gold, cut into thick fries
  • 2 tablespoons olive oil for fries
  • to taste salt for fries
  • 4 cups lettuce leaves romaine, iceberg, or mixed greens
  • 1 cucumber sliced
  • 1 tomato cut into wedges
  • 0.5 red onion sliced into rings
  • 0.75 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon hot sauce or to taste

Instructions

  • Mix the spice blend: In a small bowl, combine paprika, garlic powder, onion powder, salt, black pepper, and chili powder. Set aside.
  • Coat the drumsticks: Pat the chicken drumsticks dry with paper towels, then brush all sides with olive oil and lemon juice. Sprinkle the spice mixture evenly over each drumstick, rubbing gently to ensure the seasonings stick.
  • Preheat the grill: Heat your grill to medium-high heat, about 375-400°F, for 10 minutes until fully preheated.
  • Grill the chicken: Place drumsticks on the grill and cook for 12-15 minutes on the first side without moving them, then flip and grill for another 12-15 minutes until the internal temperature reaches 165°F at the thickest part. Char marks indicate proper browning.
  • Prepare the fries (oven method): Toss cut potatoes with olive oil and salt, spread on a baking sheet in a single layer, and bake at 425°F for 25-30 minutes, stirring halfway through, until golden and crispy.
  • Prepare the fries (grill method): Place fries in a grill basket or on a piece of foil with drainage holes, toss with olive oil and salt, and grill over medium-high heat for 20-25 minutes, shaking the basket every few minutes for even cooking.
  • Prepare the fries (deep fry method): Heat oil to 350°F in a deep pot or fryer, fry potatoes in batches for 8-10 minutes until golden, drain on paper towels, and season with salt immediately.
  • Assemble the salad: On a large platter or individual plates, arrange lettuce leaves as the base. Top with cucumber slices, tomato wedges, and red onion rings for a crisp, colorful accompaniment.
  • Make the creamy dip: In a small bowl, whisk together mayonnaise, ketchup, and hot sauce until smooth. Adjust the hot sauce to your preferred spice level and serve alongside the fries.
  • Start with your base: Arrange the fresh salad on the plate to serve as a cool, crisp complement to the warm grilled chicken and fries.
