Ingredients

  • 3 chicken drumsticks skin-on and patted dry for crispier skin
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon turmeric
  • salt and black pepper to taste
  • 4 potatoes cut into fries
  • oil for frying vegetable or canola oil works best
  • 1 cup lettuce mix romaine, spinach, or mixed greens
  • 0.5 red onion sliced thin
  • 1 cup cherry tomatoes halved
  • optional salad dressing vinaigrette, ranch, or your favorite variety

Instructions

  • Mix the Spice Blend: In a small bowl, combine paprika, garlic powder, onion powder, turmeric, salt, and black pepper. Stir until evenly blended.
  • Coat the Drumsticks: Pat the drumsticks dry with paper towels, then brush them lightly with olive oil. Rub the spice mixture all over each drumstick, making sure to coat both the meat and skin evenly.
  • Bake: Place the drumsticks on a lined baking sheet and bake at 400°F for 30-35 minutes, until the skin is crispy and the internal temperature reaches 165°F when measured at the thickest part of the thigh.
  • Prepare Fries (Deep Frying): Heat oil in a deep pan or fryer to 350°F. Add potatoes in batches and fry for 5-7 minutes until golden and crispy, then drain on paper towels and season immediately with salt. Alternatively, for oven-baked fries, toss cut potatoes with a light coating of oil, spread on a baking sheet, and bake at 425°F for 20-25 minutes, shaking the pan halfway through. Or use an air fryer: arrange fries in a single layer, spray lightly with oil, and cook at 380°F for 15-18 minutes, shaking halfway through.
  • Prepare the Salad: Place lettuce mix in a large bowl or on individual serving plates. Top with sliced red onion and halved cherry tomatoes, distributing them evenly. Add dressing just before serving if desired.
  • Plate the Salad: Start by placing your fresh salad on one side of the plate or on a separate plate.
  • Add the Fries: Arrange a generous portion of crispy fries in the center or alongside the salad.
  • Place the Drumsticks: Position the spiced drumsticks on the plate, leaning them slightly for visual appeal.
  • Serve Immediately: Bring everything to the table while the fries are still hot and the chicken skin is at its crispiest.
