  • 1 pound beef steak cut into 1-inch cubes for even cooking
  • 2 eggs large or extra-large
  • 3 cups French fries fresh, frozen, or pre-cooked
  • 2 tablespoons olive oil divided between steak and cooking
  • 2 cloves garlic minced
  • 1 tablespoon butter for the eggs
  • 1 teaspoon paprika for mild smokiness
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh parsley chopped for garnish
  • 1 small red chili finely chopped for subtle heat

Instructions

  • Prepare the Beef: Pat your beef cubes dry with a paper towel, then season generously with salt, black pepper, and paprika on all sides to ensure even flavoring.
  • Sear the Steak: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering for about 2 minutes. Working in batches if needed, add the beef cubes and sear for 2-3 minutes per side until browned but still tender inside.
  • Add Garlic and Chili: Reduce heat to medium, add the minced garlic and chopped red chili to the skillet, and cook for another 1-2 minutes until fragrant. Transfer the steak bites to a plate and set aside.
  • Prepare Fries (Oven Method): Spread frozen fries on a baking sheet, toss with a light drizzle of olive oil, and bake at 400°F for 20-25 minutes until golden and crispy, stirring halfway through.
  • Cook the Eggs: In a non-stick skillet over medium heat, melt 1 tablespoon of butter until foaming. Crack both eggs into the pan and cook for 3-4 minutes for sunny-side up, or longer if you prefer firmer yolks.
  • Season the Eggs Lightly: Once the whites are set, sprinkle a pinch of salt and pepper over the eggs and remove from heat.
  • Arrange Fries: Place the crispy French fries on one side of your serving plate or in the center.
  • Add the Steak: Place the seared steak bites in a warm pile next to the fries, ensuring they're still hot.
  • Top with Eggs: Carefully place the cooked eggs on top of or beside the steak bites.
  • Garnish and Serve: Sprinkle fresh parsley over the entire plate for color and freshness, and serve immediately while everything is warm.
